Yummy Easy Tofu

1 14 oz. package firm or extra firm tofu1 large or 2 medium onions1 tbsp olive oil1/4 cup soy sauce (substitute low-sodium soy sauce if desired)
Cut tofu into ½” cubes and set aside in a bowl.
Dice onion.
In a medium frying pan, add olive oil and diced onions.
Saute onions over medium heat until they just begin to soften.
Add tofu cubes and soy sauce, and stir together with onions. (This ensures that the soy sauce is absorbed throughout the tofu cubes.)
Cook until onions are thoroughly cooked, soy sauce is almost completely absorbed, and it looks “done.”
Makes 4 1/2-cup servings.
