Sizzle of Corn & Tomato

Ingredients
1/2 teaspoon extra virgin olive oil1/2 teaspoon finely chopped shallots1/3 cup fresh tomatoes1 cup sweet corn1/2 teaspoon finely chopped seeded jalepeno pepperpinch cumin1/4 teaspoon splenda4 teaspoons balsamic vinegarsalt & pepper
Directions
Cook shallots over medium heat until soft with olive oil. Add tomatoes, sweet corn and jalepeno pepper, cook for 1 minute. Add cumin and splenda, cook for 1 minute. Add vinegar, cook until liquid reduces slightly. Add salt & pepper.
