Beef Stroganoff

Ingredients
Tri-tip or tenderloin steak, thinly slicedShallots, 2 tbsp choppedMushrooms, fresh, 2 cups slicedButter, unsalted, 1 tbspSour Cream, reduced fat, 1/4 cupSalt, pepper, nutmegPasta or noodles, 1/2 lb.
Directions
Add pasta to boiling water. Melt 1 t. butter in large skillet over medium-high heat. Add shallots and beef and stir until beef is just browned. Remove from pan and set aside (keep warm). Melt remaining butter in same pan and stir in mushrooms. Cover and reduce heat to medium-low. Simmer for 5 minutes. Return beef and shallots to pan. Season with salt, pepper, and nutmeg to taste. Reduce heat to low and stir in sour cream. Heat through, but do not allow to boil. Toss with hot pasta or noodles.
