4 Boneless Skinless Chicken BreastsSalt-to tasteGarlic Powder-to taste 1 Cup chopped Red Bell Pepper 1.5 Tbls Extra Virgin Olive Oil 1 Cup Uncooked Brown Rice 1 CupBlack Beans (canned) 1/2 CupCheddar or Colby Cheese Low Fat Dollop Sour Cream- Low Fat
Begin cooking rice. While that is cooking,cut Chicken into bite size pieces. Dice red pepper. Saute chicken (salt and garlic pepper to taste) and pepper in olive oil, in hot skillet stir frying until chicken is cooked through. About 5-6 minutes. Warm beans. Layer on platter Rice, Chicken, Beans, Cheese, Salsa, Dollop with Sour Cream and enjoy!

Sorry, it was the first time I tried to add a recipe and when it asked to add ingredients again I didn't realize I had to add the amounts again...I think I fixed it! Again sorry...
