Ingredients
Corn Tortilla- 1Part Skim Ricotta- 2 t.All Fruit Jam 1 t. You can add a dash of vanilla extract or some lemon zest to the ricotta for a nice flavor. Vegan Version- replace the ricotta with mashed silken tofu.
Directions
Place the corn tortilla on a stove burner, when it starts to puff up take it off, spread the toasted side with the ricotta and return to the burner with the untoasted side down. As that side toasts the ricotta warms up. Remove from flame, spread on the jam and fold over.

Vegan Version- replace the ricotta with mashed silken tofu and proceed as above.
