2 c. unbleached flour ,1 1/2 c. wheat flour,1 tsp.sea salt 1 tsp. baking soda2 c. brown sugar, pkd2/3 c. peanut butter (crunchy, unsalted)2 T. unsweetened applesauce1 egg, beaten 2 c. sour milk (recipe below)
Add lemon juice to milk , stir and let set for 15 min. Grease an 8x4x2 1/2-inch loaf pan. Sift both wheat and unbleached flour , measure and resift 3 times with soda and salt. Blend sugar and peanut butter well; add applesauce and egg, beat until smooth. Add flour mixture and sour milk alternate in 2 portions beating until smooth. Turn into prepared pan. Bake in a moderate oven (350 F ) 1 hr. or until browned and bread tests done with a cake tester or toothpick. Remove from pan to cake rack to cool. Makes 2 loaves, appox. 16 slices ea. loaf.

Tasty! I subbed Splenda brown sugar, used all white whole wheat flour, reduced fat peanut butter, & buttermilk instead of sour milk - came out good. I haven't figured out the calories for my version yet, but should be substantially lower (or, I will have bigger servings!). My kids like it too! - 1/23/11
