2 Mini Babybel (original flavour)grated6 fresh Jumbo Eggs0.5 cup fresh Red Peppers cubed0.5 cup fresh Green Peas1 large Portabella Mushroom diced0.5cup Broccoli florets1 ripe Tomato diced3 tbsp.chopped Shallots1 medium stalk of Celery diced2 cups Whole Milk1.5 pat of Butter(unsalted)Salt to taste2 cloves of Garlic (chopped finely)12 wholewheat Dinner Rolls
Heat butter in a heavy bottomed pan on a slow flame and lightly fry the chopped garlic till soft.Add chopped Shallots and fry till transclucent. Add all the Vegetables and salt to taste and steam till done.Whisk the Eggs ,Cheese and Milk together.Pour over the mixture in the pan and fold in gently.Stir gently till it thickens.Serve immediately with the Dinner rolls allowing 2 rolls per person.
