Salt-Free Slimming Veggie Soup

1 tsp. olive oil1 tbs. Mrs. Dash salt free Italian Medley seasoning1 tsp. garlic powder1 tsp. black pepper2 8-oz cans low sodium veggie broth (I tweek this a bit and use a box of broth to add more liquid)1 oinion, diced1 medium green or red pepper, diced8-oz package mushroom, quartered1 medium zucchini, diced1 medium yellow squash, diced32-oz can low-sodium diced tomatoes2 carrots, diced1 medium cabbage (or can substitute broccoli or Brussels Sprouts)1 cup frozen green beans1/2 cup chopped fresh parsley
In your large saucepan, heat olive oil and saute onions and peppers until golden. Add mushrooms and saute until golden and dry. Add the rest of the ingredients and seasonings and simmer for 1+ hour.
You can substitute the veggies listed for other seasonal veggies like pumpkin squash, turnips, etc. (but no potatoes). You can also use fresh sage and thyme instead of the Italian seasoning.
