Tuna roll ups

Ingredients
1.5 cups all purpose flour2 large eggs1 Tbsp sugar1/2 tsp baking powder2 cups water2 Tbsps soya oil1/2 tsp salt2 cups grated carrot2 cups shredded cabbage1medium sized onion chopped5 tsps mustard OR lighter Italian salad dressing1 130g can of tuna chunks in brine [drained]
Directions
Makes 9, 10inch crepes.
Mix dry ingredients thoroughly.
beat wet ingredients until frothy then add flour mixture and combine till smooth. Use about 1/4 - 1/2 a cup of batter for each crepe. Wrap in the raw veggies after layering your spread and enjoy.
Fry crepes in a nonstick pan using 1/8 tsp olive/soya oil per crepe.
I usually make the crepes on the weekend and freeze them stacked flat, wrapped in plastic bags. So whenever I need them I just pop into the microwave and then add my veggies.
