Lean Beef 1oz1 medium tomatoRed onion 1/2 cupZatarain's Yellow Rice 2 cupPace Picante Sauce 2tbspReduced fat Sour Cream 4tbspLettuce (iceberg or romaine) 1/2 cupBearito's Fat Free Refried Beans 1/2 cupBeef broth 1/2 cup
Prepare Zatarain's Yellow rice according to the directions (25mins if cooked on stove top. 15mins if cooked in microwave)
While the rice cooks.
Dice tomatoes, shred lettuce and devide into two bowls.
Dice onions and cut beef into small thin strips and place them into skillett or wok with 1/2 cup beef broth cooking on medium heat for about 5 mins or until done.
Add rice, beef and onion mixture to bowls
Top with 2tbsp Pace Picante Sauce and 2tbsp Reduced Fat Sour Cream. Enjoy :)
