Puree of Red Pepper Soup P90X

Ingredients
White Wine, 16 fl oz (remove)Onions, raw, 1 medium (2-1/2" dia) (remove)*Peppers, sweet, red, fresh, 5 medium (approx 2-3/4" long, 2-1/2" (remove)Celery, raw, 2 cup, diced (remove)Garlic, 1 clove (remove)Red Ripe Tomatoes, 2 plum tomato (remove)Tomato Paste, .25 cup (remove)Chicken Broth or Bouillon, 2 cup (8 fl oz) (remove)2 Tbl. dried tyme1/4 tsp. ground white pepper and ground cumin
Directions
1.Heat wine in a Large heavy soup pot over medium heat. Add onion, red peppers,and celery. Cook and stir for 3 minutes.Stir in garLic Cook for 2 more minutes,adding more wine if necessary.

2. Add tomatoes, tomato paste,and broth; cover and bring to a boil. Reduce heat and simmer for 25 minutes.
3. Puree soup in a food processor or blender. Return to the pan,add seasonings and heat through.
4. lf desired add protein powder just before serving

    i love this recipe! the only problem i have, is that it can get really really expensive. I either wait for red bell peppers to go on sale for $1 each or i head over to the local asian market where they tend to be cheaper.

    Once i have made a big batch, i freeze individual servings. works great! - 11/7/09

    I love this soup and I don't care for soups much. Even my 2 year old likes it. I recommend it to everyone. I like to put in other colored peppers like yellow orange and green. I also let it simmer for an hour versus 25 minutes. - 2/9/13

    This recipe tasted too strong with the white wine. Next time I would try substituting chicken broth instead of white wine to see if the taste would be better. I felt kind of funny after eating a few tablespoons of it. No way I would allow my husband to eat 2 cups for his P90x menu. - 1/18/12

    So easy to make! It's hard to believe that this soup is based on so many water-heavy veggies, has only a tiny bit of seasoning and NO salt and yet it is thick, hearty, and full of rich flavor. This is definitely going into heavy rotation in my kitchen. - 2/23/10
