Spanish Rice

Ingredients
1 Large Green or Red Pepper1 Medium Onion6-8 Slices Bacon1 Can (19 fl oz) Diced Tomatoes1 Can Condensed Tomato Soup1 Can (19 fl oz) Black Beans2 Cups Minute Rice4-5 Shallots, chopped, for garnish
Directions
Chop the pepper, onion and shallots. Chop bacon and cook according to package directions. Rinse and drain the beans
Combine the diced tomatoes, soup, green pepper, onion and beans. Add the rice and bacon.
Grease a casserole dish and bake at 350 for 30-40 minutes, or until the beans are cooked.
Garnish with green onions.
Makes 16-1/2 cup servings
