Green Pilaf with Cashews

4 cups baby spinach2/3 cup cashew nute, chopped2 tablespoon olive oil6 scallions, chopped1/5 cups ong-grain brown rice2 cloves garlic, finely chopped1tsp fennel seeds2 tablespoons lemon juice2.5 cups vegetable stock3 tablespoons chopped mint3 tablespoons chopped fresh italian parsley

preheat oven to 350 F
Shred spinache into 1/2 inche pieces
roast cashews until golden
heat oil in wok and cook scalions over medium head until soft, add the rice garlic, and fennel. cook for 2 minutes until rice is evenly coated. increase heat to high, add lemon juice and 1 tsp salt. Bring to boil. Reduce heat to low, cover and cook for 45 minutes.
remove from heat and add spinach and herbs, rest covered for 8 minutes, then mix through rice, sprinkle with cashews
