Cajun Shrimp for One

1 tsp olive oil1 tsp crushed garlic1/2 tsp cajun spice1/3 cup evaporated skim milk2 dashes of worcestershire sauce2 dashes of hot sauce1 dash salt2 tbsp shredded parmesan90 grams cooked, peeled shrimp55 grams (dry) whole wheat pasta40 grams spinach
Cook pasta. Drain.
Meanwhile, saute garlic in oil. Add milk and cajun spice. Simmer for a minute or two. Add worcestershire, hot sauce, salt and 1 tbsp of the cheese. Simmer for another minute or two. Toss in shrimp, pasta and spinach. Top with other tbsp of cheese.

This was very good!! I didn't put in the spinach, I prefer to have that on the side as a salad. Loved the creamy, spicy sauce. Did not add the hot sauce, my husband doesnt like too much heat. Was really spicy enough for me also without it. Will definately make again. Thanks for a great recipe! - 1/2/10
