Ingredients
DUMPLINGS: 1/4 c. gluten rice flour2/3 c. wheat flour3/4 c. hot water1/4 c. lard1 c. cold water FILLING: 1/2 lb. ground pork1/4 lb. dried shrimp, chopped1/2 c. water chestnuts, chopped2-3 green onions, sliced thin1 tbsp. white pepper1 tbsp. soy sauce1 tbsp. sherry1 tbsp. sesame oilOil for deep frying
Directions
Mix dough. Shape into small ball then roll into circles. Set aside.
Prepare Filling: Heat pan and oil it. Stir in 1/2 pound pork, the dried shrimp, water chestnuts, stir quickly, until pork is grey. Add remaining ingredients. Stir well.
Remove from pan and cool. Place filling in center of dough. Shape into turnover. Deep fry until golden.

    I reduced the calories and fat by omitting deep frying and instead steam them. The fried version is won-ton not dim sum because dim sum is usually steamed and eaten as a light breakfast. - 3/25/07
