Cabbage Beef Casserole

1.5 lb ground beef lean2 med onion chopped1 clove garlic minced1 tsp salt1/4 tsp pepper1 14 oz can tomato sauce1/2 c. brown long grain rice4 cups shredded cabbage
In lare skillet cook beef until meat is done. Drain off grease. Stir in onions, garlic, salt, pepper, tomato sauce and water. Bring to a boil and stir in rice. Cover and simmer about 20 min or until rice is nearly tender. Place half of the cabbage in a baking dish. Cover with half of rice mixture. Repeat layers. Do not stir. cover and bake for 1 hr at 350. Serves 6

In Orlando, back in the day, there was this wonderful restaurant, Ronnie's that made killer stuffed cabbage. Not having the patience for all that I modified mine to pretty much the same as above sans garlic but add 1 cup of raisins, 15 oz tomatoes & tsp of cinnamon. LOSETOWIN!
Not sure why my rice didn't cook so I had to cook a lot longer. I guessed on amt of water added. (doesn't say how much.) Maybe that was my problem. My meat was overcooked but other than that problem it was good. I definitely would like to try it again and maybe add the rice after it is cooked. - 8/2/07
