Buttermilk Bran Muffins

Ingredients
1/3 cup Shortening, Crisco All-Vegetable, 50% less saturaated fat1/2 cup Firmly packed brown sugar1 Large egg1 cup All-purpose flour1 tsp Baking powder1/2 tsp Baking soda1/2 tsp Salt3 cups Oat bran1 cup Buttermilk, low fat
Directions
Set oven rack in middle.
Preheat oven 400 degrees F.

Combine shortening and brown sugar in a bowl. Beat the egg in a different bowl, then add to shortening and brown sugar.

In a bowl combine flour, oat bran, baking soda, baking powder, salt.

Alternating between the shortening and buttermilk, blend with the flour.

Mini-muffins take about 12 mins. to cook.
