Mexican Chicken Soup

1.5 cup chicken, shredded1 quart chicken stock14 oz. canned tomatoes, whole peeled6 oz. tomato sauce1 hot pepper1 onion, chopped3 garlic, sliced1 tsp marjoram1 tsp thyme.5 tsp ground cuminsalt2 tablespoons olive oil (for frying)
Makes 4 servings of soup. Serve with fresh tortillas or bread.
Soften onion, garlic and habanero in olive oil. When translucent add chicken, stock and tomatoes. Bring to a simmer.
Add herbs and tomato sauce.
Simmer 45 to 60 minutes, until flavors are melded.
