French (Women Don't Get Fat) Toast

- 1/4 cup egg beaters- 1/8 cup skim milk- 1/2 teaspoon ground cinnamon- 1/2 teaspoon vanilla extract- non-stick cooking spray- 2 pieces whole wheat bread
Heat a skillet sprayed with cooking spray over medium-high heat.
In a shallow bowl/dish, combine the first four ingredients. Mix together well.
Quickly dip the first piece of bread flat in the bowl, letting it soak up the liquid, but not so much that it falls apart. Do this on both sides. Put the bread on the skillet, cooking it on both sides until browned. Repeat this process with the next piece of bread.
Put on a plate and eat! It tastes extra great topped with one of the following: fresh fruit, pure maple syrup, powdered sugar, or whipped cream.
Makes 2 pieces of french toast, or 1 serving.

I have been making my french toast like this for a while, I use light bread, 2 egg whites, skim milk, almond extact and pumpkin pie spice. I also lightly toast my bread b4 I soak it in the milk mixture and I make a healthy glaze with berries, light yogurt,and a tsp of honey. It always tastes great. - 1/24/09

I used the 45 calorie per slice Sara lee bread, a regular egg, sliced two strawberries and placed the strawberries on each slice of bread, then topped it all off with 1 tb of pure maple syrup. I didnt use much of the mixture--didnt want soggy bread. I will definitely be making this again- I loved it - 7/13/09
