Mock Ceviche with Avocado

Ingredients
1/2 cup mayonnaise1/2 cup lime juice2 tbsp. capers, drained2 tsp. chili powder2 ribs celery, chopped smallMedium red bell pepper, chopped small6 oz. can premium white crab meat, packed in water, drained5 oz. can solid white albacore, packed in water, drained.5 oz. can salmon, packed in water, drained4 avocados, cubed
Directions
Whisk the mayo and lime juice in a large bowl. Stir in the capers, chili powder, celery and bell pepper. Add the crab, salmon and tuna. Stir well, breaking up the solid tuna. Gently fold in the avocado. Chill.

Makes 8 6-oz. servings.
