Sweet Salad Stuffed Cucumber

Blueberries, fresh, .5 cupCranberries, dried, sweetened (craisins), .25 cup Sunflower Seeds, without salt, .25 cup, hulled Walnuts, .25 cup pieces or chips Feta Cheese, .25 cup, crumbled Goat Cheese, Soft, 1 oz Cucumber (peeled), 6 mediumbalsamic vinegar, 2 tablespoonGrapeseed Oil, 2 tbspMaple Syrup, 2 tbsp
Toss blueberries, cranberries, sunflower seeds, walnut pieces, feta cheese and goat cheese in a bowl.
Mix vinegar, syrup and grapeseed oil. Pour over salad and toss gently.
Cut about about 2 inches off the end of each washed and unpeeled cucumber. Hollow out larger section. Stuff cucumbers with the salad.
