Blueberry Bran Yogurt Muffins

Ingredients
1 c. all purpose flour1 tsp. baking powder1 tsp. baking soda1/4 tsp. salt1/4 c. unsweetened orange juice1/2 c. honey2 tbsp. vegetable oil1 tsp. vanilla extract1 c. plain fat-free yogurt1 egg3 c. bran flake cereal1 c. fresh or frozen blueberries1 tbsp. granulated sugar (optional)
Directions
Combine the first 4 ingredients in a large bowl; make a well in center of mixture.

Combine orange juice and next 5 ingredients. Add to dry ingredients, stirring just until moistened.

Gently fold in bran flakes and blueberries.

Line muffin pan with muffin cups and divide batter among 12 cups. Sprinkle with sugar if desired.

Bake at 400 degrees for 18 minutes or until golden brown.

Makes 12 large muffins or 24 medium-small muffins.

    These were really yummy and pretty easy to make. I used Truvia instead of honey, and substituted one of the tablespoons of oil with 1/4 cup ground flaxseed (to add some omega 3 and fiber). Everyone thought they were really good! - 6/21/09
