Cracked Wheat Muffins

Ingredients
1/4 cup cracked wheat3/4 cup water2/3 cup raisins1 1/2 cup all-purpose flour1/2 cup whole wheat flour1/2 cup sugar1 Tbsp. baking powder3/4 tsp salt1 Tbsp. cinnamon1/2 cup unsweetened soy milk1/4 cup unsweetened applesauce1 Tbsp. vegetable oil1/3 cup Egg Beaters whites
Directions
1. Preheat oven to 350. Grease 12-muffin tin. Over medium heat, bring cracked wheat and water to a boil. Lower heat to simmer and cover. Cook for 7 minutes, stirring occasionally. Remove from heat and add raisins; set aside for 3 minutes.

2. In large bowl, sift or whisk together dry ingredients.

3. In smaller bowl, combine wet ingredients and cooked cereal/raisin mixture.

4. Make a well in the dry ingredients and add wet ingredients. Stir until just combined. (It should still look a bit floury.)

5. Spray ice-cream scoop with Pam baking spray (or any nonstick spray). Spoon batter into muffin tin.

6. Bake for 25 minutes, or until toothpick inserted into center of muffin comes out clean.
