Bubble Up Pizza

Ingredients
1 small onion chopped1 cup mushrooms chopped1/2 cup chopped green bell pepper1 cup pizza sauce1/2 cup vegetarian crumbles1 can Pillsbury Grands Homestyle RF Biscuits1&1/4 cup part skim mozzarella cheeseCooking Spray
Directions
1. Preheat oven to 350 F.
2. In a skillet, stir together the sauce and veggies and add any additional seasonings desired. Simmer for 5 minutes.
3. Add crumbles
4. Cut biscuits into 1/4s
5. Stir biscuits into the sauce mixture until all are covered in sauce.
6. Spoon mixture into a 9x13 baking dish coated with cooking spray.
7. Bake for 25 minutes
8. Sprinkle with cheese and bake an additional 10 minutes or until the biscuits are done.
9. Let stand 5 minutes before serving.

    I LOVE this recipe! I have my nephews help me make this and we just pull apart the biscuits into quarters and pour sauce over the top and add toppings. It's really easy (for me anyway) to not get the middle of the buscuits done.. I have to check and recheck them. Just a hint :) - 12/30/12

    I love this recipe and have already made it a few times. I use about 1 3/4 C. pizza sauce because I like it a little more saucy. My one complaint is that I find it very difficult to eat just one serving! - 1/17/09

    I made this but I did my own checking with the ingredients & got mine down to only 500 mg of sodium, cals down to 250, & I use lean ground turke. I use organic pizza sauce, f.f. mozzarella cheese & less of it. Mine also doesn't have to cook as long for some reason. We make it quite frequently - 4/5/08
