Creamy Cauliflower Soup

2 Tbsp Butter 2 Leeks, chopped1 C Onion, chopped1 Lg Head Cauliflower4C Chicken Broth, 99% fat free1 tsp Salt2 Tbsp Fresh Thyme (1/2 tsp dried)1/2 tsp Poulty Seasoning1/2 C Cottage Cheese 1%
In a large soup pot saute onions & leeks in the butter until soft, about 5-8 minutes. Coarsly chop cauliflower into florets and add to the onions. Add chicken (or vegetable) broth, salt, thyme & poultry seasoning. Bring to a boil then cover & simmer 20-30 minutes until cauliflower is soft. Stir in cottage cheese (parmesan is a good substitute). Using a hand blender blend until smooth. Makes 8 - 1.5 cup servings.
