Salmon muffins

Ingredients
2 14-ounce cans of salmon, drained well 5 eggs 1/2 cup celery, chopped fine, 1 ounce 4 tablespoons onion, chopped fine, 1/2 ounce 1/2 cup green pepper, minced, 1 ounce 4 ounces cheddar cheese, shredded Pepper, to taste Pinch Old Bay seasoning or paprika
Directions
Mix all of the ingredients and spoon into 12-17 well-greased muffin cups (depending on how big you want your muffins to be). Bake at 350º for 30 minutes until puffed, set and lightly browned around the edges.

Makes 17 muffins. 1 serv. = 1 muffin.
