Irish Stew

Ingredients
2 tsp canola oil1 lb lean/extra lean beef stew meat2 Tbsp flour1 small onion2 cups sliced fresh mushrooms6 cloves garlic minced1 6 oz can tomato paste2 cups low fat, low sodium beef broth(Swanson's used)1 12oz can Guiness Stout beef4 cups sliced carrots2 large potatoes, peeled and diced1 Tbsp cornstarch1 Tbsp ice water1/4 cup fresh chopped parsley(or 4 tsp dried)
Directions
Heat oil in a Dutch oven or large pot over medium heat. Place meat in a large ziploc bag and shake to coat with flour, shaking off the excess. Cook meat in hot oil to brown sides. Remove from pot.

Add onions, garlic and mushrooms to pot and cook, stirring constantly until onion is tender.

Return meat to pot and stir in tomato paste, broth, and beer. Add potatoes and carrots. Cover and simmer over low heat for an hour or longer.

Mix cornstarch and cold water, and stir into pot. Simmer until thickened.Sprinkle with parsley and serve.

Here, it's eaten with white or brown rice but would also be good served with soda bread or over egg noodles.
