Easy Chicken Quesadillas

Ingredients
3 Chicken breasts 1 small container fresh mushrooms (Do not use the already sliced)1/2 small onion 1 can black olives 2-3 tablespoons olive oil12 flour tortillas1 cup monteray jack cheese
Directions
Cut up chicken breasts into small thin pieces.
Slice fresh mushrooms.
Slice onion into strips
Slice black olives into pieces.
In large skillet add olive oil, chicken pieces & onion slices. Salt and pepper to taste. Cook ingredients until chicken is almost done cooking and then add mushroom slices. Continue cooking until mushrooms are tender and chicken is completely cooked. Add black olives until they are heated through. Warm tortillas until soft and lightly browned on stove top. Spoon approx. 3-4 tablespoons of chicken mixture into middle of tortilla. Sprinkle with 1 tablespoon cheese & fold in half. Place into lightly sprayed 13x9 pan. Continue adding tortillas until all mixture is used.
Cover with foil & bake for 10 mintues in preheated 350 degree oven until cheese is melted. Serve with favorite salsa or taco sauce. Nicely paired with fat free refried beans & homemade spanish rice. Makes 10-12 tortillas.

    The olives make it too salty. I would make this again without the olives. I think if you had some green onions, that would make it ok - 7/29/07

    Sounds pretty basic - can probably be made healthier by using low-fat or FF cheese, and whole wheat tortillas. - 3/14/07
