Vanishing Oatmeal Raisin Cookies

Ingredients
1/2 pound margarine or butter, softened1 cup firmly packed brown sugar1/2 cup sugar2 eggs1 tsp vanilla1 1/2 cups all purpose flour1 tsp baking soda1 tsp cinnamon3 cups Old Fashioned Oatmeal (uncooked)1 cup raisins
Directions
Heat oven to 350°F. Beat together margarine and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, and cinnamon; mix well. Stir in oats and raisins; mix well. Drop by rounded teaspoonfuls onto ungreased cookie sheet. Bake 10-12 minutes or until golden brown. Cool 1 minutes on cookie sheet; remove to wire rack. Makes about 4 dozen.
For bar cookies, bake 30-35 minutes in ungreased 13x9 metal baking pan.

    I love these cookies! I make it with the Splenda Brown sugar blend and only use 3/4 cup of that. I also use Self Rising flour instead of All Purpose and I omit the baking soda and salt. These are a big hit with my family! - 5/23/10
