Baked Lemon Chicken

Ingredients
3 Tbsp butter, melted2 Tbsp lemon juice1 garlic clove, minced1/2 tsp salt1/4 tsp black pepper1/2 cup seasoned bread crumbs4 boneless skinless chicken breasts (used Tyson 1.25 lb package)
Directions
In shallow dish, combine butter, lemon juice, garlic, salt and pepper. Place bread crumbs in another dish. Dip chicken in butter mixture, then coat with crumbs.
Place in 13 x 9 baking dish. Drizzle with remaining butter mixture. Bake, uncovered, at 350 for 25-35 minutes (depends on thickness of chicken breasts) until juice run clear.

    I made this but added about a tablespoon of olive oil mayo (not exactly healthy, but...) to the butter mixture. I also didn't have seasoned bread crumbs, so I used whole wheat bread crumbs and added a few things (oregano, lemon pepper, basil and I forget what else). It turned out delicious! - 9/23/10
