1/2 cup sliced fresh mushrooms1/2 cup grated carrots1/4 cup sliced green onions1/4 cup chopped bell pepper1/4 tsp. ginger1 clove garlic minced3 cups cooked brown rice2 tbl. lite soy sauce2 eggs beaten1/8 tsp. ground black pepper3/4 cup frozen sweet peas

Spray large nonstick skillet with nonstick cooking spray. Heat over medium heat until hot. Add first 6 ingredients. Cook and stir 1 minute. Stir in rice and soy sauce. Cook over low heat for 4 minutes, stirring constantly until egg mixture is cooked. Add peas to rice, stir gently to combine. Cook until throughly heated
