Ingredients
1 Box Spice Cake Mix1 15 oz. Can Pure Pumpkin1 Cup of Water
Directions
Mix together one box of spice cake mix, 1 cup of water, and 1 can of pumpkin. It may help to mix the water into the mix before adding the pumpkin. Transfer batter to a muffin tin. Bake 18 - 21 minutes or as directed on the spice cake mix box. Makes 24 muffins/cupcakes.

    I love these muffins, but make them slightly different. I use 1/2 cup water and 1/2 cup nonfat milk and add 1 egg. It doesn't change the calorie count all that much, but the egg improves the texture. - 3/29/08

    I've been making these for years in the form of cookies. I simply mix a can of pumpkin with a spice cake mix. Drop one tablespoon at a time onto a baking stone and cook 15 minutes. My whole family loves them. Sometimes I'll add a few chopped nuts if we're in the mood for more texture. - 2/1/10

    I use one egg white for added protein as well as 1/2 shredded carrot and 3T chopped raisins. These are fablulous and all my kids and their friends love them and they are mostly healthy. I want to find an organic boxed spice cake mix to use instead of the regular brands. - 5/12/08

    I make these all the time. You can use any kind of cake mix. I especially like devil's food cake mix. Also, if you are one that likes frosting, use a tablespoon or 2 of no fat/low fat cool whip. YUMMY - 4/30/09

    I added half cup water and applesauce too. I make mini muffins, cool, freeze and place in ziploc bag. Toss some in lunch bag frozen and by time we get to work, school or gym, they are defrosted. People request them for gifts - 4/26/12
