Sunshine Bran Muffins

1 cup white flour1 tsp baking soda1 tsp salt2 cups wheat bran2 tbsp flax seed meal1 1/2 cups skim milk1/2 cup dark honey (eg. buckwheat)1 egg white1/2 cup finely shredded carrot
1. Mix together the egg, milk and honey in a large bowl.
2. In a separate bowl, combine all the dry ingredients.
3. Mix these two mixes together and add the carrots at the end if you are including them. Stir just till combined. The mixture will look rather soggy - this is okay.
4. Spoon into non-stick muffin tins and bake at 350F for 20 minutes.
