Sweet Potato and Black Bean Burrito

Ingredients
Half a large sweet potato1 cup black beans1 galic cloveHalf an onion2 wedges light laughing cow cheese1 tsp cuminhot pepper flakesSalt and pepper to taste
Directions
Bake sweet potato in skin at 400 degrees for one hour.
Brown onion and galic in skillet until soft.
Add black beans and spices and cook for 5 minutes.
Mash together black beans and the laughing cow cheese until creamy
Heat tortilla.
Mash sweet potato on top of tortilla.
Add the bean cheese mixture.
Roll and Enjoy!

    Very good! I put a thin slice of ham on each tortilla before adding the sweet potato and beans and used farmer cheese instead of Laughing Cow. Microwave the sweet potato on high for 8 minutes rather than baking to save time. Tried a second batch adding spinach, rice, and cheddar. Yum! - 1/10/08
