Couscous with Sautéed Tilapia

Couscous, 1 cup, dryWater, 10 fl oz Clams, canned, meat only, 1 cup *Tilapia, 4 X 3 oz filletsGarlic, 3 cloves mincedOnions, raw, .5 cup, chopped Green or Red Chiles (Whole) - 1 with seeds removedFennel seed, 1 tsp Coriander seed, 1 tsp Cumin seed, 1 tsp Cilantro, raw, 6 tbspPumpkin Pie spice, 0.5 tsp
Soak the couscous in 10 oz of boiling water and set aside. If you like, you can replace 4 oz of this water with bottled Clam Juice.
Saute the onion, garlic, and chopped chiles until soft.
Using a mortar, crush the fennel, cumin coriander and pumpkin spices. Add this to the onion, garlic and chiles and mix well. Remove from pan and stir into couscous mixture.
Add a bit more oil to pan if required and cook fish for about 3 minutes each side. Remove carefully from pan, add couscous mixture and stir in fresh cilantro. Place fish on top, squirt with the juice of 1 lime, cover and turn heat off. Let sit for 3 minutes until heated through.
Serve on it's own or with a side salad.
