Lisa's Protein-Packed Pumpkin Porridge

1/4 cup oat bran - dry1/4 cup Quaker old-fashioned oatmeal - dry1/4 cup egg whites1/4 cup fat free cottage cheese1 scoop NanoPro whey protein1/2 tsp ground cinnamon or pumpkin pie spice1/4 cup 100% pure pumpkin (I use Libby's)Scant cup of water2Tblsp Mother's toasted wheat germ
Mix oat bran, oatmeal and water in a big bowl. Microwave for one and one half minutes.
After the first 1.5 minutes, add the egg whites, stir gently, and also add the pumpkin and cook for another minute. When complete, stir in the whey protein. I do not want to denature the protein, so I don't cook it, but stir it in afterward. Mine is a delicious vanilla, but use what you have. I also add the cottage cheese which tops it off beautifully. Sprinkle with cinnamon or pumpkin pie spice.
If you like things sweet, you can add stevia or any sweetener you choose.

Delicious! I used unflavored whey protein isolate, so I added a drop of vanilla extract and a pinch of salt, and sweetened it with agave nectar. Creamy, yummy, filling, and half my day's worth of protein! I also added 2 tbsp of wheat germ (saw it in ingredients details). Great recipe, thanks! - 3/15/09

Yes - but you certainly can make it on the stove. Whatever is easiest and works for you. Hope that helps. I will edit the recipe and indicate the cooking method. Thank you for checking it out. :o)

GREAT! I have a ton of pumpkin recipes - let me know if you are interested in any more recipes I use. I eat very cleanly and have great recipes using 100% pure pumpkin. Thanks for trying this one out.
