Stuffed Acorn Squash

Ingredients
Non stick spray1 small acorn squash (about 1 lb. total)6 oz. lean turkey (or pork)1/4 c. celery1/4 c. onion1/4 tsp. salt1/4 tsp curry powderDash ground cinnamon1/2 c unsweetened applesauce1 slice whole wheat bread (or raisin bread)
Directions
* Spray a 10x6x2 in. baking dish with nonstick spray. Halve squash, discard seeds. Place squash cut side down in baking dish. Bake uncoverd at 350F for 50 minutes.
* Meanwhile, prepare stuffing, in a skillet cook turkey, celery & onion til meat no longer pink & vegetables are tender. Drain off fat. Stir in salt curry powder & a dash of cinnamon; cook 1 minute more. Stir in applesauce & bread cubes.
*After removing squash fro oven , turn cut side up in dish. Place stuffing in squash halves. Bke uncovered 20 minutes more. Serves 2.
** Micro wave directions: Place squash cut side down in micro safe dish & micro on hi for 6-1/2 60 8-1/2 minutes ot til tender.

In one qt. casserole cook meat & vegetables on hi 2-3 min or til meat no longer tender, stirring twice. Drain. Stir in spices. Cook 30 secs more. Stir in applesauce & bread cubes. Spoon into squash halves. Cook uncovered on hi for 3-4 min. or til hot.

    I have made this recipe several times for guests and always receive rave revues. Everybody wants the recipe and can't believe that it is low-fat. I use the ground turkey and I experiment with different breads. Our favorite so far is pumpernickel. - 1/7/10
