Cucumber Salad

Ingredients
3 large cucumbers, peeled4 large tomatoes6 tbsp Reduced fat mayonnaise2 tbsp shallots, choppedGarlic, 1 tbsp. mincedSalt and pepper to taste
Directions
Chop cucumber, tomato and shallot.
Combine all ingredients n a large bowl, mixing well. Refrigerate for 1 hour before serving.

    very good and seems as tho you can change things around a bit and still not hurt the caloric intake much. I like the idea of fat-free yogurt (or maybe even sour cream?). Might crack some black peppercorns over it and maybe add some red onion and zucchini. I'm real big on throwing veggies into everyt - 7/15/09

    Sliced the cucumbers, instead and used FF Balsamic Viniagrette...then sprinkled with crumbled Brinza Cheese. (feta will work also). (Brinza is the Romanian version of Feta). - 6/5/08

    I used baslamic vinager low fat salad dressing instead of mayo. Let refrigerate over night to meld the flavors and it was awesome. Not my word but my daughters. They are picky eaters and have requested I make it again. - 6/4/08

    I use FF Italian or FF Classic Caeser dressing, add some sliced black olives and a few feta crumbles. Little more fat but it's mostly good fat and oh so yummy! A favorite with my family and most of the ingredients come fresh from my garden. - 7/15/09

    This was a really nice, creamy, light side dish for the burgers we had the other night. I accidentally used low-fat Miracle Whip instead of mayo, and when I make it next time I'll be sure to use mayo. The Miracle Whip just changed the flavor, and I think mayo would definitely be better! - 9/3/07
