Beef, Mushroom and Wild Rice Soup

Ingredients
Ground Beef 93% Lean, 1 lbOlive oil, 2 TShallots, 1 choppedLeeks, 1 Garlic, 1 clove Egg, fresh, 1 large Mushrooms, 10oz. containerWild Rice, 3 cup, cooked1Cornstarch 1 Tb (optional)Water, 6 cupsBeef Bouillon, 2 cubesBouquet Garni, 1 tspSalt and pepper to taste
Directions
Mix ground beef, egg, and spices together and form into 1 oz. meatballs. hop onion, shallot and garlic and cook in olive oil for 2-3 minutes. Add 6 cups of water and the bouillon cubes. Cut mushrooms and add to broth. When the broth begins to simmer, add the meatballs and simmer covered for 1 hour. Add 3 cups of cooked wild rice and thicken slightly with 1 T cornstarch.
