Irish Soda Bread

Ingredients
3 c flour (sifted)2/3 c sugar1 t baking soda1 t baking powder1 t salt1 t caraway seedspinch cream of tartar1 c raisins1 3/4 c buttermilk2 T melted butter
Directions
Place raisins in sieve and immerse in boiling water. Sift dry ingredients and stir in drained raisins. Combine eggs, buttermilk, and butter. Add to flour mixture. Mix just until moistened. Turn into greased and floured loaf pan. Bake for 1 hour 10 minutes at 350 degrees. Done when tooth pick insered comes out dry. Remove from pan after 5 minutes. Cool completely before cutting.

    This was really good (and easy to make). However, if I were going to make it again, I would do it without the caraway seeds. I think the instructions for plumping the raisins need to be clearer also. - 9/19/10
