Cauliflower, carrots and green peas

Ingredients
1 tbs vegetable oila pinch of asafoetida1/2 tsp mustard seeds1 green chillies, slit lengthways200g cauliflower, washed and cut into small florets50g green peas, fresh or frozen ( if fresh blanch in salted water) 75g diced carrots, blanched in salted water1/2 tsp mixed cumin and coriander powderpinch red chilli powder1/2 tsp turmeric powder2 tbs coriander leaves
Directions
Heat the oil, add the asafoetida and mustard seeds and sauté. As the seeds splutter, add the green chilli and cauliflower and some salt. Cook over a slow heat until the cauliflower stems soften. Add the green peas, carrots and powdered spices. Cook for a few minutes, adding a dash of water if necessary and then remove from the heat when done. Garnish with chopped coriander and serve hot .
