2 cups sliced Zucchini (1 large or 2 small)2 cups whole tomatoes--no salt (roughly chopped)I large yellow or sweet onion chopped2 cloves garlic-minced1 tbsp oliveoil1 tbsp basil1 tbsp oregano1/2 tsp salt1/2 tsp black pepper
Heat Olive Oil in large skillet. Add minced garlic and saute over medium heat for 2-3 minutes. Add Onion and saute for 2 minutes more. Add Zucchini and tomatoes, basil, oregano, salt and pepper and cook until zucchini is tender. Serves 4
