Bacon, Tomato & Cauliflower Salad

Ingredients
1 head cauliflower1/2 pound bacon, cooked crisp & crumbled (or use 2 large bags real bacon bits2 - 3 medium tomatoes, chopped6-8 green onions, sliced, including all the crisp part of the green1 cup mayonnaiseSalt and pepper
Directions
Put the cauliflower through a food processor with the shredding disk. Cook until tender-crisp or use raw. (To microwave, put it in a microwaveable casserole with about a tablespoon of water, cover it, and nuke it on high for 5 minutes.) Simply combine everything in a big bowl; salt and pepper to taste. Makes approx. 25 1/2 cup servings.
