1 dozen large eggs1 pound sausage (I like pork best), crumbled and cooked4-6 strips of bacon, cooked and crumbled1 c. chopped onion6 oz. shredded cheddar cheese (I like sharp)1/4 c. milk, skim1 c. mushroom pcs, optional**You can add more or less of any of the ingredients, depending on what you like**
Directions
Prepare and combine all ingredients in a large bowl.

Using mixer, mix together til well blended and eggs are just a lil fluffy.

Grease bottom of 9x13-inch casserole dish (I like to use a cooking spray)

Pour all ingredients into prepared dish.

Bake at 350 degrees for approx. 30 minutes, until edges are browning and bubbly.

**The best test of doneness is when you move the pan, does the middle wiggle? If so, cook a lil longer!** :)

this is great, but to make it healthier, I browned in a pan, 1 chopped onion, 1 chopped bell pepper and a small chopped zucchini. Put that into the sprayed pan first then add the other ingredients. It's SO yummy and makes quick leftovers cold or reheated. - 10/29/12

This is great! I used frozen sausage and bacon bits (the kind used for pizza toppings). Because they were still frozen, it needed about 10 minutes longer. The mixer was going to be too loud early in the morning, so I just whisked the eggs very hard and then stirred in remaining ingredients. - 1/1/12
