Shrimp and Catfish Gumbo

Ingredients
Carrots, raw, 3 mediumCelery, raw, 3 stalk, large (11"-12" long)Onions, raw, 1 largeShrimp, cooked, 4 ozChannel Catfish, 8 ozOkra, 3 cup slicesGarlic Clove 3Thyme, 1 tspBasil, 1 TBSPBlack Pepper, 1 tspCajun Seasoning (used to ones liking)1Tbsp flour
Directions
Cut up all vegetable expect okra. Add veggies to a large pot and add seaoning expect cajun seaoning. This is your stock.

Fill with water untill veggies are fully inmersed. Put on high heat until water reaches a boil. Reduce to simmer for 2-3 hr adding water if nessecary.

Mix flour with quart cup of cold water untill dissolved. Add a little bit of the hot broth at a time to the flour until you reach 1 cup total volume. Add mixture to gumbo.

Add rest of ingredients now. Cook for at least 1 extra hour. This will allow time for okra and flour mixture to thicken the soup.
