WFPB Quinoa Soup/Stew

Ingredients
Directions
Tomato juice, without salt added, 4 cupsWater, 4 cupsMixed Vegetables, frozen, 10 ozEdamame beans, or mixed beans, dry, 1 cupQuinoa, dry, 0.5 cupcajun spice, 1 TBSP
Place all ingredients in a pot. Boil until beans are soft. Adjust spices to taste.
Serve immediately.
Leftover soup will thicken itself into a stew overnight. Enjoy as a stew, or, add an additional 4 cups tomato juice OR water to return it to a soup consistency. It will then remain a soup.
If you don't have cajun spice, make sure you add a spice that has a little bit of a bite to it (like black pepper) otherwise it will taste bland.
A grain, a legume (bean), and a vegetable combined form complete protein. Also, quinoa has complete protein.

hello. i made this with a few tweaks and it was very awesome and good! first, i added a bunch of random veggies (corn, green bellpepper, tomato, potato, shallot (Sp?)) instead of frozen mixed veggies. I didn't have beans, and I added whatever I had for cajun seasoning (googled vegan seasoning). YUM! - 11/12/11
