Oriental Turkey Lettuce Wraps

Ingredients
1 tsp canola oil1.3 lbs 99% lean ground turkey1 tbs minced ginger1tsp minced garlic1/3 cup Hoisin Sauce1/2 cup shredded carrots1 cup finely chopped red bell pepper1 medium cucumber peeled, seeded, chopped1/2 cup chopped scallions8 large bib lettuce leaves
Directions
heat oil in a heavy large nonstick skillet over med heat. Add ground turkey and ginger, cook 3-5 min until turkey is no longer pink, breaking up turkey into small pieces. Add garlic cook 30 seconds. Stir in Hoisin Sauce and stir to coat turkey, add carrots and pepper saute about 2 minutes more. Spoon turkey mixture into leaves. Sprinkle with cucumber and scallions.
