Ingredients
half cup soy flour, 1 cup whole wheat flour, half cup wheat bran, 1/4 cup ground flaxseed, 1/2 cup brown sugar, 1 tsp cinnamon, 1tbs baking powder, 1 cup apple juice, 1/4 cup milk, 4 tbs butter - melted, vanilla extract, 2 eggs, apple juice, 1 apple, 1 banana, 1/2 cup raisins, 1 small yam -optional
Directions
This recipe makes 18 muffins.
Preheat 350 degrees Fahrenheit.
Combine all dry ingredients first, then add eggs, milk, apple juice, melted butter, and vanilla. Next add chopped apples, smashed banana, smashed small sweet potato, raisins, chocolate chips. Mix well to incorporate, batter will be thick and pasty. Put in muffin cups and bake for 25 minutes.
