Moist Banana Cake

Ingredients
3 Bananas, very ripe, fresh, (3 medium = to about 2 cups mashed)Banana, fresh, 1 small (6" to 6-7/8" long; just added to get rid of it)Applesauce, unsweetened, 0.5 cup Baking Soda, 1 tspEgg, fresh, 1 large Cinnamon, ground, 1 tbsp Vanilla Extract, 1 tsp *Flour, white, 1.5 cup*Brown Sugar Splenda, 18 tsp - 3/4 cup*Blue Bonnet Light Margarine, 4 tbsp or any other type of margarine.
Directions
Depending on your oven, Preheat to 350; Max 375 for older ranges and 325 if using a darker pan
If using a darker pan you will also need to lower the cooking time to prevent burning.

First start with two separate bowls.
In first bowl mix all dry ingredients...flour, sugar, baking soda and cinnamon.

Second bowl: Beat egg, cut in margarine, add applesauce and vanilla extract, then add the mashed bananas.

Add wet (banana) mixture to dry (flour) and stir until well blended.

I used a large pyrex baking dish, but you can use for muffins or any other type of dish; however please remember it will rise quite a bit.

Pour the batter into a well-greased baking dish, or muffin cups. Place in the oven for 15 -20 minutes at 350, 12 -15 minutes for 375 or 8 - 10 mins at 325 *if using a dark pan

Yield 15 servings of banana cake squares
if using a pyrex baking dish.

    I adapted this because I was trying to clear the cupboards-I used wholewheat flour, added a handful of sultanas and used 2tbsp oil instead of 4tbsp margerine. It is delicious. - 4/26/09
