Ingredients
* Ground turkey 1 - 1.5 lbs* Celery ( 2 long stalks or 4 smaller )* Onion 1 large (of your choice) * Mushrooms ( fresh 1 cup slices or diced)* Garlic (3 cloves or 4 Tbs minced- I use minced)* Chickin broth (1 can reduced sodium)* Kidney beans ( 2 cups)* Brown rice (1 cup uncooked)* Corn ( 1 can of your choice)* Tomato's (1 can diced of your choice)* Jalapeno peppers ( 1 1/2 cups diced or slices)Leave jalapeno seeds in if you want it to be much more spicy. ( I do )
Directions
Brown ground turkey in a skillet drain fat , add jalapeno's and onion. Stir and mix well on medium heat about 2 min. Put in crockpot. Add garlic, celery, kidney beans, mushrooms, chicken broth, rice, tomato's with juice, corn with juice. Use one of your 2 cans to put 3 cans of water in crockpot.
Season to taste ( I used pepper, seasoning salt, onion powder and chili powder.) Stir well turn crockpot on high and walk away! about 2 hours in if you are home, stir and replace lid. If you are cooking this in a pan, I would put on like 5 or 6 ( medium) You have a larger chance of the rice sticking to the bottom of the pan so you need to stir more often. ( not a problem with a crockpot.)

Amazing. Spicy, comfort food with a ton of nutrients! LOVE it! Fills you up with great flavors and texture. I shared it with my husband & co-workers & they liked it so much, my co-worker made it the next day. It is a little bit of work but it makes a lot! Makes enough to have lunch for two weeks! - 1/9/11

I haven't tried this yet so I can't rate it yet. I would like to try it soon but wondered how long it takes in the crockpot. Is it done in 2 hours when you stir it? - 5/5/10
